MAKING CHEESE WITH VITAMINS
The features preconditioning ingredients for the production of cheese with vitamins and method of making vitamins in it were investigated. Cheese with vitamins (with the introduction of such vitamins as A, E, B1, B2, B6, B12, C, folic acid, rutin, nicotinamide) was made by the technological scheme.
The degree of cheese maturity was investigated.
The basic organoleptic properties of cheese with vitamins where studied. They do not differ from regulatory requirements. Addition of vitamin complex impairs the organoleptic properties of cheese and enriches it with additional vitamins. Determined that complex of vitamins has positive effect on the separation of cheese whey.
