Abstract

The method of application of the fundamental laws of the theory of control systems with distributed parameters concerning the definition of temperature and time regimes sterilization technology for example sterilization of canned meat was established.Its basis is the formulation and solution of problems of optimum speed for the heating process control with the main phase restrictions, which primarily include the phase limitation on the maximum temperature and maximum acceptable loss of nutritional value in the process of sterilization in autoclaves continuous action. The proposed algorithms modes of temperature and time of sterilization. While permissible provided food value, the relative biological value proteins by lability to enzymatic hydrolysis.
