VETERINARY AND SANITARY EVALUATION OF BEEF CARCASSES AFFECTED WITH CYSTICERCOSIS

Abstract

Cysticercosis of cattle disease, which is a factor of danger to consumers of beef in the world.

Under the current «Rules ante mortem inspection of animals and veterinary-sanitary examination of meat and meat products» tsistitserka detected by the cut, so called «traditional» places - the muscles of the head (masetery), chest, shoulder, elbow, lumbar muscles, muscles of the pelvic limbs, heart and tongue. But numerous studies tsistitserka found in «nontraditional» places – lungs, liver and 20 individual muscles, indicating a much more tsistitserka in the affected carcasses. This fact should be considered when veterinary and sanitary evaluation of beef carcasses.

Analysis of statistical data shows that the prevalence of cysticercosis beef carcasses that come to the realization, in the south of Ukraine does not exceed 0,024–0,017%. Of these, 0,010-0,014% of carcasses sent for recycling.

Research has established that destruction of bovine cysticercosis promotes organ and tissue contamination MAFAnM, BGKP and salmonella, and promotes their toksychnochti.

Based on the obtained as a result of research data, we recommend at tsystitserkiv found during mortem veterinary-sanitary examination of carcasses beef coming into realization in the south of Ukraine, regardless of the degree of destruction of carcasses, send them for recycling.
